RED THAI CURRY WITH CAULIFLOWER & SWEET POTATOES

INGREDIENTS
- 1 pouch of Red Thai Curry Sauce
- 1 medium size head of cauliflower, washed and cut into bite size pieces, be sure not to discard the leaves that look good enough to eat.
- 2 medium sized japanese white sweet potatoes, peeled and cut into 1 inch pieces
- 1 Tbsp Avocado or Coconut oil
- Salt & Pepper
- Scallions, Cilantro, Lime
INSTRUCTIONS
- Heat the oven to 375 F.
- Heat the oil in a cast iron skillet and add the cauliflower and potato. Season with S&P and stir. Put in the oven.
- Cook the veggies until they are nicely browned, stir every once in a while.
- In the meantime, steam 1 cup of Jasmine rice.
- Heat the Curry in a separate pan.
- Assemble the plates as shown in picture. Enjoy!
