RED THAI CURRY WITH CAULIFLOWER & SWEET POTATOES

COOK TIME: 20 MIN

TOTAL TIME: 30 MIN

INGREDIENTS

  • 1 pouch of Red Thai Curry Sauce
  • 1 medium size head of cauliflower, washed and cut into bite size pieces, be sure not to discard the leaves that look good enough to eat. 
  • 2 medium sized japanese white sweet potatoes, peeled and cut into 1 inch pieces
  • 1 Tbsp Avocado or Coconut oil
  • Salt & Pepper
  • Scallions, Cilantro, Lime

INSTRUCTIONS

  1. Heat the oven to 375 F.
  2. Heat the oil in a cast iron skillet and add the cauliflower and potato. Season with S&P and stir. Put in the oven. 
  3. Cook the veggies until they are nicely browned, stir every once in a while.
  4. In the meantime, steam 1 cup of Jasmine rice. 
  5. Heat the Curry in a separate pan.
  6. Assemble the plates as shown in picture. Enjoy!
