Pork and Brussel Sprout Curry

INGREDIENTS for 4 people
- 1.5 lbs ground pork
- 2 cups Brussels sprouts, trimmed, halved and rinsed clean with water
- 1 can Mike’s Organic Red Curry Sauce
- Salt & Pepper
- 2 Tablespoons vegetable oil
- 1 onion, finely chopped
- 1 tablespoon fish sauce (optional)
- Steamed Jasmine Rice for serving
INSTRUCTIONS
- Roast Brussel Sprouts: In a large pan, heat 1 TBSP of the vegetable oil over medium high heat and add the Brussel sprouts. Let them brown undisturbed for 4 to 5 minutes. Season with Salt & Pepper, toss them and roast until they’re nicely browned all over.
- Cook Pork: In a large pan or wok, heat 1 TBSP vegetable oil over high heat. Add the pork, Salt & Pepper and cook until browned, add chopped onion. Sauté until the onion is soft and fragrant.
- Add the Brussel Sprouts to the pork.
- Add the Curry Sauce
- Add Fish Sauce if desired
- Serve the curry over Jasmine Rice.
