Pork and Brussel Sprout Curry

Demeter Red Thai Curry

INGREDIENTS

1.5 lbs ground pork

2 cups Brussels sprouts, trimmed, halved and rinsed clean with water

1 can Mike’s Organic Red Curry Sauce

Salt & Pepper

2 Tablespoons vegetable oil

1 onion, finely chopped

1 tablespoon fish sauce (optional)

Steamed Jasmine Rice for serving

INSTRUCTIONS

  • Roast Brussel Sprouts: In a large pan, heat 1 TBSP of the vegetable oil over medium high heat and add the Brussel sprouts. Let them brown undisturbed for 4 to 5 minutes. Season with Salt & Pepper, toss them and roast until they’re nicely browned all over.
  • Cook Pork: In a large pan or wok, heat 1 TBSP vegetable oil over high heat. Add the pork, Salt & Pepper and cook until browned, add chopped onion. Sauté until the onion is soft and fragrant.
  • Add the Brussel Sprouts to the pork.
  • Add the Curry Sauce
  • Add Fish Sauce if desired
  • Serve the curry over Jasmine Rice.
