Red Thai Curry with pork and Brussel sprouts

Pork and Brussel Sprout Curry

TOTAL TIME: 22 MIN

INGREDIENTS for 4 people

  • 1.5 lbs ground pork
  • 2 cups Brussels sprouts, trimmed, halved and rinsed clean with water
  • 1 can Mike’s Organic Red Curry Sauce
  • Salt & Pepper
  • 2 Tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 tablespoon fish sauce (optional)
  • Steamed Jasmine Rice for serving

INSTRUCTIONS

  1. Roast Brussel Sprouts: In a large pan, heat 1 TBSP of the vegetable oil over medium high heat and add the Brussel sprouts. Let them brown undisturbed for 4 to 5 minutes. Season with Salt & Pepper, toss them and roast until they’re nicely browned all over.
  2. Cook Pork: In a large pan or wok, heat 1 TBSP vegetable oil over high heat. Add the pork, Salt & Pepper and cook until browned, add chopped onion. Sauté until the onion is soft and fragrant.
  3. Add the Brussel Sprouts to the pork.
  4. Add the Curry Sauce
  5. Add Fish Sauce if desired
  6. Serve the curry over Jasmine Rice.
