MASSAMAN BRAISED BEEF RIBS

MASSAMAN BRAISED BEEF RIBS

Ingredients:

  • 2 lbs (900g) beef short ribs (bone-in)
  • 2 Tbsp vegetable oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 pouch Mike's Organic Massaman Curry Paste
  • 1 can (14 oz) Mike’s Organic Coconut Cream
  • 2 cups beef broth
  • 2 large potatoes, peeled and cut into chunks
  • 2 large carrots, cut into thick pieces
  • 2 onions, quartered and roasted
  • 1 Tbsp palm sugar (or brown sugar)
  • 2 Tbsp fish sauce
  • 1 Tbsp tamarind paste

For Garnish:

  • Sliced scallions

Instructions:

1. Sear the Beef Ribs

  1. Preheat oven to 375°F
  2. Heat vegetable oil in a Dutch oven or heavy-bottomed pot over medium-high heat.
  3. Season beef ribs with salt and pepper, then sear them on all sides until browned (about 3-4 minutes per side). Remove and set aside. Discard most of the oil, but leave about 1 Tbsp to fry the curry paste.

2. Roast the Onions

  1. Place quartered onions on a baking sheet, drizzle with a little oil, and roast for 15 minutes until slightly charred.

3. Cook the Curry Base

  1. In the beef rib pot, reduce heat to medium and add Mike's Organic Massaman Curry Paste. Stir-fry for 1-2 minutes until fragrant.
  2. Add the beef broth, stirring to combine.
  3. Stir in fish sauce, tamarind paste, and palm sugar.

4. Braise the Beef

  1. Return beef ribs to the pot, cover, and transfer to the oven. Braise for 2.5 to 3 hours until fork-tender.
  2. After 2 hours, add potatoes, carrots, and roasted onion quarters.
  3. After 2.5 hours add the Mike’s Organic Coconut Cream and cook for another 30 minutes.

5. Serve

  1. Serve the ribs with steamed jasmine rice or roti.
  2. Garnish with fresh scallions.
