MASSAMAN BRAISED BEEF RIBS

Ingredients:
- 2 lbs (900g) beef short ribs (bone-in)
- 2 Tbsp vegetable oil
- 1 tsp salt
- ½ tsp black pepper
- 1 pouch Mike's Organic Massaman Curry Paste
- 1 can (14 oz) Mike’s Organic Coconut Cream
- 2 cups beef broth
- 2 large potatoes, peeled and cut into chunks
- 2 large carrots, cut into thick pieces
- 2 onions, quartered and roasted
- 1 Tbsp palm sugar (or brown sugar)
- 2 Tbsp fish sauce
- 1 Tbsp tamarind paste
For Garnish:
- Sliced scallions
Instructions:
1. Sear the Beef Ribs
- Preheat oven to 375°F
- Heat vegetable oil in a Dutch oven or heavy-bottomed pot over medium-high heat.
- Season beef ribs with salt and pepper, then sear them on all sides until browned (about 3-4 minutes per side). Remove and set aside. Discard most of the oil, but leave about 1 Tbsp to fry the curry paste.
2. Roast the Onions
- Place quartered onions on a baking sheet, drizzle with a little oil, and roast for 15 minutes until slightly charred.
3. Cook the Curry Base
- In the beef rib pot, reduce heat to medium and add Mike's Organic Massaman Curry Paste. Stir-fry for 1-2 minutes until fragrant.
- Add the beef broth, stirring to combine.
- Stir in fish sauce, tamarind paste, and palm sugar.
4. Braise the Beef
- Return beef ribs to the pot, cover, and transfer to the oven. Braise for 2.5 to 3 hours until fork-tender.
- After 2 hours, add potatoes, carrots, and roasted onion quarters.
- After 2.5 hours add the Mike’s Organic Coconut Cream and cook for another 30 minutes.
5. Serve
- Serve the ribs with steamed jasmine rice or roti.
- Garnish with fresh scallions.
